Reduced alcohol wine - innovative process for controlling the level of alcohol in wine

Design and industrialisation of an innovative process for controlling the level of alcohol during wine production. The process will be environment-friendly and provide sugar recycling.

The RAW project sets out to develop a process that will control the alcohol levels of wine at the time of production. This innovation is based on a combination of sugar removal and multi-stage continuous tangential filtration never seen before. Research and Development works must be carried out in order to find solutions to the technological bottlenecks identified in the NATURAL POOL project. The commercial goal of the RAW project is to offer new equipment to large producers, co-operatives and distillation centres, thereby helping them control the alcohol level of the wines produced.
