Creation of new confectionery product production technology, using organic plants grown in baltic and nordic regions

To create new production technology for confectionery articles by using baltic and nordic regions growing organic actinidia, cucurbita, physalis alkekengi and helianthus tuberosus, as well as economic technologies and equipment designed to save maximum biologically active materials.

Over the last few decades, a lot of attention has been paid to plants, with high amounts of anti-oxidative compounds able to scavenge free radicals, retarding aging processes of cells, and having other beneficial properties. A lot of such valuable compounds are found in Actinidia kolomikta, Cucurbita maxima, Cucurbita moschata, Physalis alkekengi and Helianthus tuberosus. All these plants are cultivated in Baltic and Nordic regions and are not spread out only because of little usage. It is sad to note that all of Europe is behind when compared to such countries as JAPAN and the U.S.A. in the development and production of functional foods, functional food additives and food ingredients. JSC 'RUTA', together with scientists and partners from POLAND and ESTONIA, decided to investigate the possibilities of applying these plants in confectionery production and designing new technology for production of high quality bio confectionery products. JSC 'RUTA' is constantly searching for new ways of producing original, high quality and healthy products and presenting them to consumers. After discovering the optimal application of Actinidia kolomikta, Cucurbita maxima, Cucurbita moschata, Physalis alkekengi and Helianthus tuberosus, which are healthy and enriched with natural vitamins, phenolic compounds and other biologically active compounds, also having original flavour products, will be created. According to the data of marketing analyses, all the above mentioned plants are usually cultivated as decorations. So after investigation of new processing methods and application possibilities in confectionery products, the data may be spread among other producers. During this project, new technology for producing novel confectionery will be developed. This will promote the popularisation of bio confectionery products, increase the assortment of confectionery products, and provide a better choice for consumers and use of plant raw materials, which are rich in vitamins and other biologically active components, in the production of confectionery.
