Baking products with functional ingredients for the healthy food niche market

New baking products, from bread to pizza, can be upgraded into the healthy food market by adding functional ingredients with beneficial impact on health by being a source of vitamin b, a source of fibre and digestible protein and a source of glutamic acid.

The project will develop new baking products from bread to pastry, pizzas, brioche and other bakery products enriched with a functional ingredient coming from the fermentation of hominy feed to produce ethanol. Hominy feed is a by-product from the manufacture of pearl hominy, hominy grits or table meal, from corn. It is similar in appearance to ground corn, has slightly more energy and protein, and has similar feeding characteristics. The idea is to transform Hominy Feed into a functional ingredient, to be used in Food (baking products) by extracting oil of very good quality (corn oil) and by producing ethanol. With this project we will be able to transform a material of low value used in animal feed, the Hominy Feed, into: i) bioenergy (ethanol); ii) high valued food product – corn oil; iii) food material loaded in proteins, aminoacids and fibre, a functional ingredient, to be used in bakery for the market of Healthy foods. This significant increase of value of a secondary product and the diversification of the companies into new markets, by the development of new products, will have a serious positive impact on the competitiveness of the two companies involved: the milling and the bakery company, coming from very traditional industry sectors, where innovation has a low probability of being added. This second company, from another EC country, will promote the introduction into the European market of the new bakery products, therefore opening the market for the milling company, while producing consistent knowledge to the subsequent technology transfer to other, including the Portuguese, companies of these new bakery products. This upgrade of the bakery products to the healthy food market is achieved by the addition of the functional ingredient, the solid residue of the ethanol fermentation of the hominy feed. This product is high on protein and dietary fiber and has a considerable amount of autolized yeast. This yeast material is high on vitamin B and on glutamic acid, both very important for the brain functions. This beneficial impact on health is reinforced by the dietary fiber content which is beneficial for cholesterol regulation, helps prevent constipation and reduces the risk of colon cancer. Other improvements in gastrointestinal health can be: - improvements in glucose tolerance and the insulin response - reduction of hyperlipidemia, hypertension and other coronary heart disease risk factors -reduction in the risk of developing some cancers -increased satiety and hence some degree of weight management. In Europe these products have an urge since the population is aged and prevention of chronic diseases is of paramount importance. Other market is the population undergoing vegetarian diets where the lack of vitamin B is a key point.
