Eggshell processing and production of eggs with functional food properties

We will develop technology for eggshell processing and technology for simultaneous egg enrichment with omega-3 fatty acids, vitamin a, d, e, k and b, and minerals iodine, zinc and selenium. Our goal is production of eggs with functional food properties for better nutrition in the general population.

Parallel with the abundance of food in Western society is the increased frequency of chronic diseases. We have more and more scientific evidence that the problem is closely connected with excessive and unbalanced food consumption. Among the most frequent reasons for health problems induced by nutrition are too much energy in the diet from sugars and fats - especially too many saturated fatty acids, too little omega-3 acids, imbalance of omega -3 to omega-6 fatty acids, lack of some vitamins, specially antioxidants and lack of several minerals. Eggs have long been an important food for humans and remain a popular food throughout the world. They are nutritious, excellent protein quality and important source of unsaturated fatty acids, phosphorus, trace minerals, vitamins A, E, K, D and B complex. Development of omega-3 enriched eggs appears to be a positive step toward promoting the increased dietary intake of omega-3 fatty acids in the general population. These eggs are enriched naturally, by supplementing hen feed with fish oil, flaxseed, linseed oil, or marine algae. The list of benefits from increased dietary omega-3 fatty acids includes the prevention and possible treatment of coronary heart disease, type ll diabetes, rheumathoid arthritis, Crohn's disease and also some types of cancer. These eggs are enriched naturally, by supplementing hen feed with fish oil, flaxseed, linseed oil, or marine algae. Development of omega-3 enriched eggs appears to be a positive step toward promoting increase dietary intake of omega-3 fatty acids in the general population. The addition of two n-3-enriched eggs per day to a low fat diet can provide approximately 50 percent of the proposed adequate intake of omega-3 fatty acids for adults. Based on human clinical trials, omega 3 fatty acid enriched eggs can be a healthful addition to a low fat diet without adverse effects on most people's serum cholesterol. On our market we have different omega-3 enriched eggs. The fatty acid composition of yolk depends on fatty acid composition of hen feed mixtures. It differs according to different omega-3 components that we use for that purpose such as flax seed, canola, fish oil, algae and their concentration in feed mixtures. Therefore omega-3 enriched eggs also differ in cost price. Our goal is to develop feeding technology for optimal omega-3 enriched egg fatty acid composition at a lower cost price. At the same time we want to enrich the eggs with a vitamin E, A, E, K, D and B complex and the minerals selenium, iodine and zinc, They both are good antioxidants and also essential in our nutrition. We hope that by vitamin E and selenium supplementation we will prevent omega-3 acid oxidation in eggs during storage and also improve the antioxidant status in the consumer’s body. The consortium consists of three partners - EMONA NUTRITION RESEARCH & DEVELOPMENT DEPARTMENT from Ljubljana (ERDC), NATIONAL RESEARCH & DEVELOPMENT INSTITUTE FOR ANIMAL BIOLOGY AND NUTRITION I.B.N.A. from Balotesti (IBNA) and S.C. AVICOLA BUCURESTI S.A. (S.C. AVICOLA). The partners will cooperate and complement each other in the project research field. All partners have research experience in this field and ERDC and S.C. AVICOLA are leading national feed and egg producers. Therefore there will be no problem to perform nutritional experiments on the layer's farms. In the last phase of the project we will perform enriched egg pilot production and marketing in both countries - SLOVENIA and ROMANIA. We will define the sensorial properties of enriched eggs and prepare nutritional recommendations for consumers. We will also prepare recommendations for storing and processing enriched eggs. We hope that at the end of the project we will be able to offer the consumer a tasty and healthy product. Eggshells are biological waste, an ecological problem, and the producer has relatively high costs in the safe removal of it. In the project we want to use them as a source of calcium carbonate in animal nutrition. We will explore the egg shell processing for mono- and di-calcium phosphate production.
