Innovative biofortified bakery products through valorification of brewing by-products

The overall project concept is to use yeast biomass (spent yeast biomass resulted from brewing process and enriched brewing yeast biomass) in order to produce selenium-enriched dry baker’s yeast for the bakery industry.

The overall project concept is to use yeast biomass (spent yeast biomass resulted from brewing process and enriched brewing yeast biomass) in order to produce selenium-enriched dry baker’s yeast for the bakery industry. The main objectives of the project are: 1-high valorisation of brewing biomass, as spent yeast biomass and enriched brewing yeast biomass, to produce new selenium-enriched dry baker’s yeast for the bread industry; 2-development of the new bakery products as functional food enriched in compounds with an antioxidant activity (selenium). The project goals will be fulfilled by acting to enrich the brewing yeast in organic selenium through fermentation of hopped and unhopped malt wort using different brewing yeast strains. The project aims at developing the technology to produce bread and other bakery products with textures and appearances that can compete with the popularity of white breads, but offering a higher quality and the diversification of the usual range of baking products. BrewSePan is a market-oriented RTD project and the proposed research is pre-competitive. The main originality and innovation aspect is the production of active brewing biomass that aims at developing new range of bread enriched in compounds with antioxidant activity, namely selenium, which is not regular used in bread-making. In this respect, there are many specific objectives. The quantitative and qualitative assessment of beer biomass enriched in selenium will be achieved in order to determine the degree and effectiveness of enrichment with selenium as a compound acting antioxidant to be used in bakery products. Nowadays, the average dietary intake of selenium has plummeted in Europe, although selenium is crucial to our diet in terms of boosting immune system and reducing cancer mortality. Investigations in order to bake naturally-enriched selenium loaves were made, but most results refer to reinvigorated soil for harvesting wheat Se-enriched or use selenium as food supplement in „farma-food”. The addition of these new ingredients to wheat and mixture fermented dough and evaluation of its characteristics, and nutritional composition, together with volatile profile, physical-chemical / sensory properties and shelf life of baked bread will be evaluated. Special attention will be given to food safety, too. Scale-up of the technological solutions till pilot and industrial scale are taken into account. The project will significantly contribute to products development through RDI activities with impact on the business growth of the SMEs partners. By developing the new products and implementing the proposed technology the SMEs partners will promote a new activity which can contribute to the durable development of the fortified foods sector in Romania and France. It is targeted to consumers’ acceptance and indirectly to the food safety aspects. This 3 year project for boosted usage of selenium-enriched bread and bakery products in Europe involves 5 partners who represent Romania and France. The SME partners in the consortium seek R&D expertise to develop new product and technology for bread and bakery market, to produce selenium-enriched bread and bakery products with a higher level of health components. This opens new markets for the bakery industry. At the enterprise level, the project will also increase their capacity and creates a competitive advantage in terms of diversifying the bakery range of goods. The EU Regulation (EC) No 1924/2006 establishes the rules governing the nutrition and health claims made on foods and according with Regulation (EC) No 1925/2006 on the addition of vitamins and minerals and of certain other substances to foods states that vitamins and minerals may be added to foods voluntarily by food manufacturers or must be added as nutritional substances as provided for by specific Community legislation.
